Vanilla Cupcakes with Buttercream Frosting 1

School finally closed for 2 months. 2 months!! Looking forward to the days ahead…..

Vanilla Cupcake with Buttercream Frosting
Makes 12 mini and 6 regular muffins

Ingredients:
1 cup all-purpose flour
1 tsp baking powder
¼ cup butter
½ cup milk
1 tsp vanilla essence
½ tsp nutmeg grated
1 egg

Frosting:
¼ cup butter
1 ½ cups icing sugar
1-2 tbsp milk or cream
colour

Method:
Sift flour and baking powder. Add salt and nutmeg powder.
Cream butter and sugar.
Add egg and vanilla and beat well.
Add flour alternately with milk at low speed in 3-4 additions.
Fill ¾ th of muffin pan and bake in a preheated oven at 150 degree Celsius for 10-12 mins for mini muffins and 15-20 mins for regular muffins.
Cool on a wire rack.

Frosting:
Beat butter well. Add 1 cup icing sugar and mix well. Add 1 tbsp of milk or cream.
Add more icing sugar or cream to get the required consistency.
I used the exact amount mentioned and frosted only the mini cupcakes.

Vanilla Cupcakes with Buttercream Frosting

Notes:
Cool on a wire rack or steel sieve, otherwise moisture will form at the base.
Can be baked as a cake.
Add nuts or chocolate chips for variation.
