These are really good, stays crisp for a very long time.
¾ cup all-purpose flour
¼ cup corn flour
1 tbsp sugar
1 cup buttermilk (or milk)
4 tbsp olive oil
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
1 egg lightly beaten
½ tsp vanilla essence
½ tsp nutmeg grated
Maple syrup/chocolate syrup for serving
In a bowl, whisk flour, cornflour, baking soda, baking powder, salt, nutmeg and sugar.
Add buttermilk, egg, oil and vanilla. Whisk well and leave for 15-20 minutes.
Preheat the waffle iron. Lightly grease before cooking the waffles.
Serve with maple syrup or any toppings of your choice.
Dilute yogurt to make buttermilk.
