Koosa Stir Fry (Arabic Zucchini)
3-4 koosa sliced with a mandolin
1 medium onion sliced (half circles)
½ tsp jeera
½ tsp ajwain
½ tsp chili powder
¼ tsp turmeric powder
2 tbsp coriander leaves chopped
2 tbsp oil
Salt to taste
Heat oil and add jeera and ajwain.
When it splutters, add onion and saute till almost brown.
Add chili powder and turmeric powder and stir well.
Add koosa and salt. Don’t add water
Cook covered for 10-15 mins stirring often. Mix coriander leaves and take off fire.
Serve with Chapathis.
