Tuna Salad in Lettuce
6-8 Romaine lettuce leaves
1 tin tuna drained (170 gms)
½ cup chopped onions
½ cup chopped capsicum
½ cup sweet corn
1 cup chopped tomatoes (deseeded)
2 tbsp chopped coriander leaves
1 green chili chopped (optional)
2-3 tbsp mayonnaise (optional) (I did not use)
Salt and pepper to taste
Wash and wipe lettuce leaves dry. Use the ones which are not too flat.
In a bowl, mix all the other ingredients.
Place 3 tbsp of tuna mixture in the center of lettuce leaves and serve.
Keep all items ready beforehand. Add salt only before serving.
