Orange Cake

Ingredients:
2 cups all-purpose four
2 tsp baking powder
½ tsp salt
1 cup sugar
½ cup butter
1 tbsp boiling water
3 eggs
1 cup orange juice (prefer fresh)
1 tsp orange rind

Method:
Sieve flour and baking powder. Add salt.
Beat butter and sugar for a minute. Add 1 tbsp boiling water and beat again for 1 minute. (This makes mixing easier).
Add one egg at a time and beat well
Add flour in 2-3 additions and mix.
Add orange juice too in 2-3 additions. The batter should be fluffy and not runny.
Add orange rind and mix.
Pour into a butter paper lined baking tray.
Bake in a preheated oven at 160 degree Celsius for 30-35 minutes or until a toothpick inserted at the center of the cake comes out clean.
Slice and serve.
