Now, this doesn’t taste like a restaurant bought one….but tasty and easy. Add spices to suit your palate. Wrap in a pita bread with few slices of tomato, pickles and sprinkle of chopped parsley along with hummus or mayonnaise and you have a tasty easy dinner.
500 gms chicken breasts (2-3 nos)
1 onion chopped fine (optional)
4 garlic cloves
1” piece ginger
½ tsp cumin powder
¼ cup chopped parsley
¼ tsp cardamom powder
1 tsp pepper powder
½ tsp red chili flakes (optional)
1 egg (small)
3 tbsp bread crumbs
1-2 tbsp oil
Salt to taste
Wash and cut the chicken breast to small cubes.
Add chicken, garlic, ginger, cumin, parsley, cardamom powder, cumin powder, pepper, chili flakes and salt in a food processor bowl and pulse till all are minced.
Add egg and pulse few times again.
Add breadcrumbs and mix. It might look as if you should add more breadcrumbs….but DON’T.
If you are not using food processor, mince the chicken and mix all ingredients in a bowl.
Leave it aside for 10 minutes.
Rub oil in your hands and scoop a handful of the mixture and form long rolls. Place on oiled plate or butter paper.
With your finger, carefully press down the kabab leaving 1” distance.
Heat a non-stick pan or grill pan and sprinkle 1 tbsp oil (don’t add more or it will fry). Keep the heat fairly high in the beginning.
Lay the kebabs carefully as many fits in the pan. After a few seconds, flip them over.
Reduce the flame to medium now and cook both sides – no more than 10 minutes.
Transfer to a serving plate and serve with a dip or make sandwiches.
Grate a garlic clove to every 2 tbsp mayonnaise to make a spread on pita bread to make kabab sandwich.
