Eggless Carrot Cake with Condensed Milk

Ingredients:
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon powder
½ tsp nutmeg powder
1 cup grated carrots
½ cup ground almonds (powder 3 handful in a blender with 1 tbsp flour)

Mix the below liquid ingredients in a large bowl.
1 tin /14 oz condensed milk
6 tbsp butter or oil
½ cup thick butter milk
1 tsp vinegar

Method:
Mix flour, baking powder, baking soda, cinnamon powder, nutmeg powder.
Mix in almond powder and grated carrots.
Fold in the dry ingredients to condensed milk mixture until well combined.
Pour batter into a greased baking pan.
Bake in a preheated oven at 160 degree Celsius for about 40-45 mins.
If the top browns too fast, place a piece of aluminum foil on top without touching the top of the cake.
Cool the cake completely and serve as is or dust with icing sugar or cream cheese or whipped cream…whichever you prefer.

Ingredients
1 cup all-purpose flour
1 cup corn flakes
½ cup oats
½ cup desiccated coconut
½ cup whole almonds
½ cup raisins
½ cup sugar
½ tsp baking soda
½ cup butter
1 egg OR 1 tbsp flax powder mixed with 3 tbsp water
½ tsp salt
1 tsp vanilla essence

Method:
Beat butter and sugar for few minutes.
Add egg OR flax egg, vanilla essence and mix well.
Add flour, baking soda and salt and mix well.
Add coconut, almond, cornflakes, oats and fold to combine. Don’t overmix.
Use your hands or 2 tablespoons to scoop walnut size piece of dough, slightly flatten them and place on a parchment paper lined baking tray.
Bake in a preheated oven at 160 degree Celsius for 12-15 mins.
Cool them on a wire rack. They will harden as they cool.
Store in an airtight container.

Ingredients:
2 cups all –purpose flour
1 tsp baking powder
1 tsp baking soda
¾ -1 cup sugar
½ cup yogurt
½ cup oil (or ¼ cup oil +1 egg)
2 ripe bananas
1 cup chopped apples (1 large apple)
1 tsp vanilla essence
½ tsp nutmeg powder
½ tsp cinnamon powder
2 pinch salt

Method:
Whisk flour, baking powder, baking soda, cinnamon powder, nutmeg powder and salt in a large bowl.
Peel and chop apples and keep aside.
Add bananas, oil, yogurt, sugar and vanilla essence in a blender and blend to smooth mixture.
Make a well in the center of flour and add banana mixture.
Mix with the whisk just to combine. Add apples and mix again. Do not overmix.
Fill ¾ of muffin liners and bake in a preheated oven at 160 degree Celsius for 20-25 mins or until the top becomes golden brown.
Serve warm or cold.

Ingredients:
2 cups all-purpose flour
2 tsp baking soda
¼ tsp Salt
1 cup chopped dates
2 cups water
½ cup oil
½ -1 cup sugar
1 tsp cinnamon powder

Method:
Sieve flour and baking soda. Add salt and keep aside.
In a pan, add dates, water, sugar, oil and cinnamon powder.
Bring to a boil and then let it simmer for 10 -15 mins.
Take off fire and cool. (Keep in another pan filled with water if you are in hurry)
Add flour in three additions and whisk well to combine.
Pour into a greased loaf pan and bake in a preheated oven at 160 degree Celsius for 40-45 mins.
Cool in pan for few minutes and invert onto a wire rack to cool completely.
Slice and serve.
Absolutely moist and wonderful cake!

Notes:
Can add ½ cup nuts
Cool the mixture completely before adding flour.

Ingredients:
1 cup all-purpose flour
½ cup cocoa powder
¾ icing sugar
1 tsp baking soda
½ tsp salt
5 tbsp melted butter or ouil
1 cup buttermilk (3-4 tbsp yogurt +water)
2 tsp coffee pwd dissolved in 1tbsp water (optional)
3 tbsp nuts -optional

Method:
Mix all dry ingredients in a bowl.
Make a well in the center and add all wet ingredients and stir to combine.
Transfer to a greased baking tray.
Bake in a preheated oven at 160 degree Celsius for 20-25 mins.
If it’s fully baked, it becomes a perfect cake, so slightly under bake to get a fudgy brownie. It’s a win-win either way.
Cool completely before you slice and serve.

Ingredients:
2 cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp garlic powder
¼ tsp cayenne powder
½ tsp salt
1 tsp sugar
½ cup butter melted
1 cup cold buttermilk
1 cup cheddar cheese shredded

Topping:
2 tbsp butter melted
½ tsp garlic powder
½ tsp parsley

Method:
Whisk flour, baking powder, baking soda, garlic powder, cayenne , sugar and salt in a large bowl.
Add cheese and stir.
In a smaller bowl, stir buttermilk and melted butter. Butter will form small clumps.
Add to the flour mixture and mix gently with a rubber spatula till all flour is mixed.
Either use a big spoon to scoop out the mixture and place on a greased or parchment covered baking tray or use your hands to grab small portions, form rounds and gently press to flatten and place on the tray.
Leave some space between the biscuits.

Bake in a preheated oven at 180 degree celsius for 12-15 mins or until the biscuits start to become golden brown.
While the biscuits are baking, melt the butter for topping and add garlic powder and parsley.
As soon as you take the biscuits out of oven, brush the melted butter on top.
Serve warm.

2 Minute Eggless Mug Cake – Chocolate and Vanilla

Perfect for a 2 min cake in a microwave!! That too eggless!

2 Minute Eggless Mug Cake – Chocolate and Vanilla

Ingredients:
4 tbsp all-purpose flour (measuring spoon)
2 tbsp cocoa powder
¼ tsp baking powder
3 tbsp sugar
2 tbsp vegetable or canola oil
5 tbsp milk
1 tbsp nutella or peanut butter (optional)

Method:
You can either mix ingredients in the same cup but I prefer to mix separately in a bowl and pour batter into cups. I usually double the above to make 2-3 mug cakes. Microwave temperature varies so start on High with 2 mins but you will need max 1 min and 10 secs or 1 min 20secs. Don’t overcook as it will become dry.

Add flour, cocoa powder, salt, baking powder and sugar in a bowl and mix with a fork.
Add oil and milk and mix until just combined.
Pour into a mug. Add a tbsp of nutella or peanut butter if using in the center and push it down.
Microwave as mentioned above.

For vanilla mug cake, replace cocoa powder in above with 1 tbsp extra flour and add ½ tsp vanilla essence.

Ingredients:
1 ½ cups plus 2 tbsp flour
¼ cup cocoa powder
¼ tsp baking powder
½ tsp baking soda
1/3 cup sugar (I used brown)
¼ cup vegetable oil (I used olive oil)
1 tsp vanilla essence
3 -4 tbsp milk
½ cup chocolate chips or less

Method:
Mix flour, cocoa, baking powder, baking soda and sugar with a spoon.
Pour in oil, vanilla and milk and mix to combine.
Use your hands to bring to a dough.
Mix in chocolate chips and make small balls. OR
Make small balls, flatten it slightly and press few chocolate chips on top. This way I used hardly ¼ cup chips.
Place on parchment paper lined baking tray and bake in a preheated oven at 160 degree Celsius for 10-15 mins.
If you take out in 10 mins, the cookie will look underdone, but its perfect as a brownie cookie. 12-15 mins will make crispy outside and soft inside. Perfect again!
Bake as you prefer. Let it cool for few mins and serve.

Ingredients:
2 cups all-purpose flour
2 tsp baking soda
¾ cup sugar
½ cup oil
2 cups water
1 cup chopped dates
½ cup walnuts
½ tsp cinnamon powder
1 tsp vanilla essence

Method:
In a medium pan add sugar, water, oil, dates and cinnamon powder and heat the mixture.
Let it come to boil and then simmer for 15 mins.
Take off fire and cool completely.
Add vanilla essence.
Sieve flour and baking soda.
Add little at a time to the cooled mixture and mix well.
Add nuts and mix well.
Pour into a greased baking pan and bake at 160 degree Celsius for approx. 30 mins or until a toothpick comes out clean when inserted at the center of the cake.
Cool in the pan for 10 mins. Invert and let it cool completely.
Slice and serve.

Ingredients:
1 cup all-purpose flour
1 tsp baking soda
10 large soft dates (or 15-20 small)
¾ cup milk
¼ – ¾ cup sugar (add based on the sweetness of dates)
8 tbsp vegetable oil or 6 tbsp olive oil
1 tsp vanilla essence

Method:
Sieve flour and baking soda.
Deseed the dates. Put in a blender along with sugar and milk and make a smooth paste.
Transfer to a bowl and add oil and vanilla essence. Whisk to mix.
Add flour and whisk well.
Pour into a greased baking tray and bake in a preheated oven at 160 degree Celsius for 35-45 mins or until a toothpick inserted at the center of the cake comes out clean.
Let the cake cool in the pan for 5 mins and then invert on to a plate.
Slice and serve!
