Mini Oreo Cheesecake with Greek Yogurt

Ingredients:
8 tbsp cream cheese
8 tbsp Greek yogurt
½ tin condensed milk (approx. 190 gms)
6 oreo cookies

Method:
Have all ingredients at room temperature.
No need to purchase Greek yogurt. Tie yogurt in a muslin cloth and leave overnight in the fridge. (Don’t forget to bring to room temperature; otherwise the batter will be grainy).
Whisk cream cheese, yogurt and condensed milk till smooth.
Place cupcake liner in the cupcake tray and place a Oreo cookie in each.
Pour 2-3 tbsp batter on top.
Bake in a preheated oven at 150 degree Celsius for 5-6 mins. (I accidently baked for 10 mins.)
Cool, refrigerate and enjoy.

Ingredients:
3 ½ cups all-purpose flour
1 ½ cups water
3 +2 +2 tbsp olive oil
1 tbsp yeast
1 tsp sugar
1 tsp salt

Toppings are all optional as per your choice
Parmesan cheese, rosemary, olives, tomato, onion, pizza flavors etc.

Method:
Grease a 9” x 13” pan (or any big pan) with 2 tbsp olive oil.
Warm ½ cup water and add yeast and sugar. Let it bubble.
Combine all ingredients (3 tbsp oil) in a food processor bowl or hand held mixer bowl and mix till combined.
Scoop the sticky dough (very loose and sticky) to the greased pan and spread.
Cover loosely and let it rise for 1 hr.
Preheat the oven to 180 degree Celsius.

Simple Foccacia 1

Gently poke the risen bread all over. Drizzle remaining olive oil.
Sprinkle topping of your choice.

Bake the bread till golden brown for approx 30-35 mins. (If the bread is done and not brown on top, just broil for a few minutes).

Ingredients:
1 ½ cups cooked chickpeas
1 cup oats
1 cup brown sugar (or ½ cup more )
1 large egg (or ¼ cup applesauce)
3 tbsp olive oil
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup chocolate chips

Method:
Blend all ingredients except chocolate chips in a food processor to a smooth paste.
Fold in chocolate chips.
Pour batter into a parchment lined baking pan.
Bake in a preheated oven at 150 degree celsius for 30-35 mins.
Serve warm or cold.

Ingredients:
1 ½ cups all –purpose flour
¾ cup sugar
¼ tsp baking powder
½ tsp baking soda
1 cup yogurt
½ cup oil
2 tsp vanilla essence

Method:
Whisk yogurt in a large bowl.
Add sugar and whisk well.
Add baking powder and baking soda and mix.
Leave it for 5 minutes, the mixture will become bubbly.
Add vanilla and oil and mix.
Add flour in 2 -3 additions and mix well.
Pour the batter into a greased pan and bake in a preheated oven at 150 degree Celsius for 25-30 minutes or until it passes the toothpick test.

Perfect Pizza Dough

There are many ‘perfect pizza dough’ on the web.  I have had my fair share of trying out many pizza dough recipes, many were good….but I still kept on trying until I found this on whippedtheblog. There is another recipe that uses less yeast which is equally good. I will post that soon.

This works well for thick crust as well as thin crust. Make some extra dough and freeze, or make pizza base and freeze. Some days when you are feeling lazy and don’t feel like cooking, you still have homemade dinner that will be liked by all. Make small pizzas and top with everybody’s individual choices.

Perfect Pizza Dough

Ingredients:
2 ½ cups flour
2 ½ tsp yeast
1 tsp honey
1 tbsp olive oil
1 cup warm water
½ tsp salt

Method:
Add honey and yeast to warm water and let it rise. (5-10 mins)
Add flour, salt, oil and yeast in a bowl of food processor and knead for 5 minutes. If you are doing by hand, knead for at least 10 minutes.
Keep in an oiled bowl and let it rise for 1 hour.
Deflate and knead again. Divide the dough into 2 big or 8 small balls. Flatten the balls into rounds of ¼ “thickness using your hand or roller pin. Use minimal flour.
Rub olive oil over the surface and prick with a fork.
Preheat the oven to 250 degree Celsius. Slide the pizza on to a parchment paper or pizza pan and bake for 5 -8 minutes. (Pizza will look firm in the center)

Take out and spread pizza sauce and top with any toppings of your choice, add cheese and bake again for 5 minutes or till the cheese is bubbly.

Notes:
The dough can be frozen. Rub olive oil over the dough, wrap in a cling wrap and seal in a ziplock bag. Thaw in the fridge when required. But it’s better to make pizza base and freeze.
Freeze individually wrapped.
Add toppings on the frozen base and bake. (No need to thaw the frozen base).

Ingredients:
Chocolate batter:
1 ½ cups all-purpose flour
¼ cup chocolate powder
1 cup sugar
1 tsp baking soda
¼ tsp salt
1 cup hot water
1 tbsp vinegar
6 tbsp oil
2 tsp vanilla essence

Vanilla batter:
1 ¾ cups all-purpose flour
1 cup sugar
1 tsp baking powder
¼ tsp salt
1 cup hot water
1 tbsp vinegar
6 tbsp oil
2 tsp vanilla essence

Marble Cake 1

Method:
Follow the same method for chocolate and vanilla batter.
In a large bowl, add all dry ingredients.
In another bowl, mix all wet.
Add wet to dry and mix well.
Grease and line a baking round pan or loaf pan or bundt pan and line with butter paper.
Pour layers of vanilla batter and chocolate batter alternately. Take a wooden skewer or oiled knife and make zigzag motion in the batter. Don’t over mix.
Bake in a preheated oven at 150 degree Celsius for 30-40 mins or until a skewer comes clean when poked in the center of the cake.
Cool on a wire rack.
Sprinkle icing sugar on top or frost the cake

This is a variation of Breakfast Oats Cake that I had posted earlier.

Banana, Oats & Goji berry Cookies/strong>

Ingredients:
½ cup quick cooking oats
1 banana
2 tbsp goji berry (or any nuts, raisins, dates etc)

Method:
Mash banana and mix with oats and goji berries.
Take small balls and flatten to round shapes.
Place on a plate and microwave 4 minutes to get crispy cookies.

The edges are very crispy with chewy center….healthy and yum.

Apple Cobbler

For me, any dish with cooked apples and cinnamon is the ultimate dessert. The smell, the look, the taste…everything is perfect.

I would make more of apple pies, crisps or cobblers…but there are no takers for ‘sweets’in my house and one person who shares my sweet tooth is my son and apples are ‘yuck’ for him!! Sigh!!

Apple Cobbler

Ingredients:
Filling:
2 apples (peeled and diced to bite size)
2 tbsp brown sugar
1 tbsp corn flour
1 tsp cinnamon powder
½ tsp nutmeg grated
2 pinch salt
¾ cup water

Topping:
½ cup all-purpose flour
1 tbsp sugar
½ tsp baking powder
¼ tsp baking soda
2 tbsp cold butter (cut into small pieces)
5 tbsp buttermilk
1 tbsp canola oil
1 tsp brown sugar to sprinkle on top before baking

Method:
Combine the filling ingredients in a pan and cook on low heat till apples are soft. Stir once in a while to ensure it doesn’t stick to the pan. Divide warm apples into 4 ramekins.

In a small bowl, combine buttermilk and oil.
In a medium bowl, combine flour, baking powder, baking soda and sugar.
Add butter to the flour and combine with your fingers till it resembles coarse breadcrumbs.
Add buttermilk mixture to the flour and mix until just combined.

Spoon over the warm apples and sprinkle brown sugar on top.

Bake in a preheated oven at 150 degrees Celsius for 20-25 minutes until the top starts to brown.
Let it cool a bit before eating.

Ingredients:
¾ cup flour
½ cup shredded mozzarella
¾ cup shredded or diced pepperoni
¾ tsp baking powder
½ tsp oregano
¾ cup milk
Pizza sauce to serve
(no need to add salt)

Method:
In a large bowl, whisk flour, baking powder and oregano.
Whisk in milk and egg.
Stir in cheese and mozzarella and let stand for 10 minutes.
Bake in mini muffin cups in a preheated oven at 150 degree Celsius for 15-20 minutes.
Serve with pizza sauce.

Ingredients:
1 cup all-purpose flour
½ tsp baking powder
½ tsp baking soda
¼ tsp nutmeg powder
¼ tsp salt
¾ cup yogurt
¼ cup olive oil or sunflower oil
½ cup grated carrot
½ cup sugar
1 tsp vanilla essence
¼ cup nuts (optional)

Method:
Sieve flour, baking powder, baking soda. Add salt and nutmeg powder.
Mix yogurt, sugar, vanilla essence and oil till sugar dissolves
Add carrot.
Add flour and whisk till smooth. Add nuts if you are using.
Bake in a preheated oven at 150 degree Celsius for 20-25 mins or until a skewer inserted in the center comes out clean. The top of the cake will attain a light brown colour.
Cut ‘n serve.
