Ingredients:
3 cups all-purpose flour
¼ tsp baking soda
1 tsp cinnamon powder
2 tsp vanilla essence
½ tsp nutmeg powder
½ tsp salt
1 cup butter
1 cup white sugar
1 cup brown sugar
6 eggs
¼ cup canola oil
1 cup buttermilk

Method:
Whisk flour, baking soda, nutmeg, cinnamon and salt in a bowl and keep aside.
In a large bowl, beat butter and both sugars until well mixed.
Add eggs and beat well.
Stir in oil and vanilla.
Stir in flour alternating with buttermilk in 3-4 additions.
Pour batter into a well-greased bundt pan or 2 loaf pans.
Bake in a preheated oven at 160 degree Celsius for 50-60 mins or until a toothpick inserted in the center of the cake comes out clean.
Cool the cake in the pan for 10 mins and transfer to a wire rack to cool completely.
Slice and serve!

This is one of the best and simple cake I ever had. It is extremely soft and fluffy.

Lemon Buttermilk Cake

Ingredients:
1 ¾ cup all-purpose flour
1 cup sugar
½ cup butter (I used buttery taste sunflower oil spread)
1 tbsp boiling water
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
2 eggs
½ cup buttermilk (3 tbsp yogurt + enough water to make ½ cup)
Grated lemon zest of 1 lemon (1 tbsp or more)
Lemon juice of 1 lemon (4 tbsp)

Method:
Sieve flour, baking soda and baking powder. Add salt.
Beat butter and sugar for a few minutes. Add boiling water and beat again.
Add one egg at a time and mix well.
Add lemon zest and lemon juice and mix.
Add flour alternately with buttermilk in 3 additions, ending with flour.
Pour into a baking pan lined with butter paper.
Bake in a preheated oven at 150 degree Celsius for 25-30 minutes or until a toothpick comes out clean when inserted in the center of the cake.
Let it cool before you slice.
