2 cups all-purpose four
2 tsp baking powder
½ tsp salt
1 cup sugar
½ cup butter
1 tbsp boiling water
1 cup orange juice (prefer fresh)
1 tsp orange rind
Sieve flour and baking powder. Add salt.
Beat butter and sugar for a minute. Add 1 tbsp boiling water and beat again for 1 minute. (This makes mixing easier).
Add one egg at a time and beat well
Add flour in 2-3 additions and mix.
Add orange juice too in 2-3 additions. The batter should be fluffy and not runny.
Add orange rind and mix.
Pour into a butter paper lined baking tray.
Bake in a preheated oven at 160 degree Celsius for 30-35 minutes or until a toothpick inserted at the center of the cake comes out clean.
Slice and serve.
This is a very simple chocolate cake using vinegar and no eggs. It can be made in a jiffy.
I love baking cakes….but not frosting and decorating!! So when kids insisted, I used the easiest frosting of all….whipped chocolate ganache.
By the time the cake was ready, it was late night, so I had to do all the frosting in the morning….a perfect breakfast which brought smiles to two faces.
Eggless Chocolate Cake
1 ½ cups flour
¼ cup cocoa powder
¾ cup sugar
1 tsp baking soda
¼ tsp salt
1 cup water
1 tbsp vinegar
5 tbsp canola oil (or any neutral tasting oil)
1 tsp vanilla essence
8 tbsp chocolate chips
8 tbsp cream
Mix flour, sugar, cocoa powder, baking soda, salt in a big bowl.
Mix water, vinegar, oil and vanilla essence in another bowl.
Add liquid to dry and whisk till mixed. Don’t beat too much.
The batter will be runny.
Bake in a preheated oven at 150 degrees Celsius for 25-30 minutes or till it passes the skewer test.
Heat cream to boiling point.
Add to chocolate chips. Leave it for few minutes.
Whisk till well mixed. Refrigerate for few hours or overninght if you are preparing it ahead.
Whisk till it becomes thick and frost the cake.
