Eggless Date Cake

Ingredients:
2 cups all-purpose flour
2 tsp baking soda
¼ tsp Salt
1 cup chopped dates
2 cups water
½ cup oil
½ -1 cup sugar
1 tsp cinnamon powder

Method:
Sieve flour and baking soda. Add salt and keep aside.
In a pan, add dates, water, sugar, oil and cinnamon powder.
Bring to a boil and then let it simmer for 10 -15 mins.
Take off fire and cool. (Keep in another pan filled with water if you are in hurry)
Add flour in three additions and whisk well to combine.
Pour into a greased loaf pan and bake in a preheated oven at 160 degree Celsius for 40-45 mins.
Cool in pan for few minutes and invert onto a wire rack to cool completely.
Slice and serve.
Absolutely moist and wonderful cake!

Notes:
Can add ½ cup nuts
Cool the mixture completely before adding flour.

Ingredients:
2 cups all-purpose flour
2 tsp baking soda
¾ cup sugar
½ cup oil
2 cups water
1 cup chopped dates
½ cup walnuts
½ tsp cinnamon powder
1 tsp vanilla essence

Method:
In a medium pan add sugar, water, oil, dates and cinnamon powder and heat the mixture.
Let it come to boil and then simmer for 15 mins.
Take off fire and cool completely.
Add vanilla essence.
Sieve flour and baking soda.
Add little at a time to the cooled mixture and mix well.
Add nuts and mix well.
Pour into a greased baking pan and bake at 160 degree Celsius for approx. 30 mins or until a toothpick comes out clean when inserted at the center of the cake.
Cool in the pan for 10 mins. Invert and let it cool completely.
Slice and serve.

Ingredients:
1 cup all-purpose flour
1 tsp baking soda
10 large soft dates (or 15-20 small)
¾ cup milk
¼ – ¾ cup sugar (add based on the sweetness of dates)
8 tbsp vegetable oil or 6 tbsp olive oil
1 tsp vanilla essence

Method:
Sieve flour and baking soda.
Deseed the dates. Put in a blender along with sugar and milk and make a smooth paste.
Transfer to a bowl and add oil and vanilla essence. Whisk to mix.
Add flour and whisk well.
Pour into a greased baking tray and bake in a preheated oven at 160 degree Celsius for 35-45 mins or until a toothpick inserted at the center of the cake comes out clean.
Let the cake cool in the pan for 5 mins and then invert on to a plate.
Slice and serve!
