Crispy Honey Granola Bars

2 cups rolled oats (I used quick oats)
1 cup rice crispies
½ sliced chopped almonds
½ cup unsweetened coconut
½ tsp cinnamon powder
¼ tsp salt
½ cup honey
2 tbsp butter
2 tbsp brown sugar
2 tsp vanilla entrance
Preheat the oven to 160 degree Celsius.
Spread oats and nuts on a parchment covered baking sheet and toast for 10 mins, occasionally stirring.
Add coconut and mix well and bake again for 5-7 mins.
Meanwhile, add honey, brown sugar, butter, salt and vanilla in a small pan and heat until brown sugar dissolves.
Take off fire and keep aside. It ok if it cools little bit.
Mix oats, cinnamon powder and rice krispies in a large bowl.
Add the honey mixture and mix well.
Grease the same parchment paper lightly with oil and spread the oats mixture evenly. Don’t make it too thick.
Don’t press down hard.
Return to oven and bake for 25 minutes. Take out and cool till warm to touch.
Cut into bars with a serrated or sharp knife. Store in an airtight container when completely cool.
Note: After baking for 20 minutes, I switched off the oven and left it inside for 2hrs (oven door closed) The result was very crunchy crispy bars!!
Granola bars made at home is so much healthier than store brought ones. You can pretty much add what you like and making them is no effort at all.
Homemade Chewy Granola Bars
2 cups quick cooking oats
¾ cup wheat germ (optional –add oats instead)
1 cup chopped nuts (I used almonds)
½ cup sunflower seeds (or sesame, or more nuts)
1 cup dry fruits (mix of figs, cranberries, apricot)
5 tbsp brown sugar
4 tbsp butter
½ cup honey
1 tsp vanilla essence
Line a baking tray with parchment paper or aluminum foil and grease lightly with oil.
Mix oats, nuts and wheat germ. Spread on a baking tray and toast in hot oven at 160 degree Celsius for approx. 10 minutes.
Keep stirring in between. Don’t let it burn.
In a large pan heat butter, brown sugar, honey and vanilla.
Let it reach full boil and simmer for 2-3 minutes. Take off fire.
Add the oats mixture and dry fruits to the pan and stir well making sure all dry is mixed with the honey mixture. (It will look like lumps)
Spread on the baking pan and press down with the spoon.
Take another piece of parchment paper in your hands and press the mixture firmly. (This is important or lese the bars will crumble while cutting).
Let it cool completely. Cut into bars and individually wrap in cling wrap or butter paper.
Store in the refrigerator.
