Rice flour and Oats Pancake- soft

Ingredients:
½ cup white rice flour
¼ cup oats powder (powder oats in a grinder)
¼ cup corn flour
1 tsp baking powder
1/8 tsp baking soda
2 tbsp sugar
2 pinch grated nutmeg (optional)
½ tsp vanilla essence
1 beaten egg
¾ – 1 cup buttermilk (4 tbsp yogurt + water)

Method:
Whisk rice flour, oats powder, corn flour, baking powder, baking soda, sugar and nutmeg powder in a large bowl.
Add egg, vanilla and buttermilk and make a thick batter.(thin also works)
Heat a non-stick pan and add little butter.
Pour a ladleful batter and sprinkle chocolate chips if using.
When bubbles start to appear, flip to other side and cook for 30 seconds more.
Serve with honey or maple syrup.

Oats Peanut Butter Pancake with Dates Syrup

Ingredients:
1 cup all-purpose flour
½ cup oats flour (powder regular oats in grinder)
3-4 tbsp brown sugar
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 large egg
1 ¼ cup buttermilk or yogurt mixed with water
4-5 tbsp creamy peanut butter
1 tsp vanilla essence
3-4 tbsp mini chocolate chips (optional)

Method:
Whisk flour, oats powder, baking powder, baking soda, salt and sugar in a bowl.
Whisk buttermilk, sugar, peanut butter, egg and vanilla in a large bowl until well combined.
Add flour mixture and whisk lightly or fold to combine.
Fold in chocolate chips. Don’t over mix.
Heat a non-stick pan and brush butter. Keep medium heat.
Pour 3-4 large tbsp batter and make into circle with the back of the spoon.
When bubbles start to appear, flip over and cook for 30 secs.
Serve with any syrup of your choice; date syrup pairs well!

Aebleskiver is Danish pancake made plain or with filling. Its made in special pan called aebleskiver pan or for some of us in…..unniappam chatti!

Aebleskiver with Almond Flour (Danish Pancake)

Ingredients:
1 ½ cup all-purpose flour
½ cup almond flour (powder almonds in grinder)
3-4 tbsp sugar
2 tsp baking powder
½ tsp baking soda
1 ¾ cup buttermilk (or yogurt +water)
2 eggs
2 tbsp melted butter or oil
1 tsp vanilla essence

Method:
Whisk flour, almond flour, baking powder, baking soda and sugar in a bowl.
In another bowl, whisk egg.
Add buttermilk, oil and vanilla and mix.
Add wet to dry and mix just until combined.
Heat aebleskiver pan (unniappam chatti) and brush butter or oil.

Fill each mould ¾ full.
When bottom starts to brown, use a toothpick to turn it upside down. Cook for additional 30 sec to 1 min till it becomes brown.
Transfer to a plate and sprinkle icing sugar.
Serve with honey or maple syrup, but even delicious without.

Quinoa Pancake

Ingredients:
1 cup cooked quinoa
½ cup all-purpose flour
1 tsp baking powder
¼ tsp baking soda
3 tbsp sugar
¾ cup yogurt
1 egg
1 tsp vanilla essence
¼ tsp grated nutmeg (optional)

Method:
Place flour, baking powder, baking soda, sugar and nutmeg powder in a large bowl and whisk to combine.
Grind cooked quinoa and yogurt to a smooth paste. Add egg and vanilla essence and pulse to combine.
Pour into flour mixture and use the whisk gently to combine. Batter will be thick, but add little water if required.
Heat a nonstick pan and brush little butter.
Pour 1 large ladleful and spread to form thick round.
When bubbles start to appear, flip over and cook for few seconds more.
Serve with maple syrup or honey or any topping of your choice.

Ingredients:
¾ cup fine semolina
5 tbsp flour
1 tbsp sugar
1 tsp baking powder
1 ¼ tsp yeast
1 ¼ tsp warm milk
1 egg
Pinch of salt

Method:
Blend all ingredients in a blender until smooth.
Pour into a bowl and let it rest for 30 mins until its bubbly.
Heat a non-stick pan and lightly rub little oil or butter.
Pour a big ladleful of batter. Spread a little with the back of the ladle.
Cook on medium heat till holes appear all over and surface looks dry. No need to flip.
Remove from pan onto another plate. Do not stack.
Serve with honey or any other syrup or roasted bananas with brown sugar.

Ingredients:
1 cup flour
2 tbsp coco powder
2 tbsp flaxseed powder
1 tsp baking powder
¼ tsp baking soda
2 tbsp sugar
½ medium sweet potato boiled (optional)
1 egg
1 cup + 3 tbsp buttermilk
¼ tsp salt
3 tbsp mini chocolate chips

Method:
Whisk flour, sugar, flaxseed powder, baking powder, baking soda and salt in a bowl.
Blend sweet potato, egg, buttermilk till smooth.
Pour wet into dry and whisk until combined.
Add chocolate chips and mix.
Heat a non-stick pan and add ½ tsp butter. When it melts, add 3-4 tbsp of batter for each pancake.
When bubbles start to appear, flip the other side.
Cook for a minute and transfer to a plate.
Serve hot with more sprinkles of chocolate chips.

A quick and easy breakfast…..

Yogurt Pancake

Ingredients:
1 cup all-purpose flour
1 tsp baking powder
¼ tsp baking soda
1 tbsp sugar (optional)
1 cup low fat yogurt
1 tsp vanilla essence
1 egg

Method:
Mix flour, sugar and baking powder.
Beat egg in a bowl. Add yogurt, vanilla essence and mix.
Add baking soda to yogurt and mix well.
When it starts to bubble, add flour and keep for 5 minutes.
Heat a pan and lightly coat with butter.
Pour ladleful and slightly press to form round shape. (The batter will be thick).
When bubbles appear on top, flip and cook for a few seconds more.
Serve with fresh fruits and maple syrup or honey.

Yogurt Pancakes 1

Healthy sweet potato pancake

My kid’s favourite breakfast…pancakes. But as usual they have no clue what healthy stuff goes inside them. After all, all is fair in love and making picky eaters eat.

Ingredients:

1 cup all purpose or wheat flour
1 tsp baking powder
1/4 tsp baking soda
1 cup buttermilk
1 tbsp sugar
1 egg
1/2 tsp nutmeg powder
1/2 medium size sweet potato cooked and mashed
1/4 tsp salt
Few butterscotch or chocolate chips
1 tbsp oat bran -optional
1 tbsp date syrup or honey -optional

Method:
Mix flour, baking powder, baking soda, nutmeg powder and salt in a large bowl.
Beat egg in another bowl. Add buttermilk and sweet potato and mix. (you can even use a blender to mix all but dont overmix)
Add wet to dry and mix with a whisk. The mixture will be little thick and not too runny.
Heat a non stick pan or tava and add little butter. Pour 2- 3 tbsp of pancake mixture onto the hot pan. Make 2 -3 pancakes at the same time, depending on the size you want. Add a few chips of your choic on top.
When the bubbles appear, flip it over and cook for a few seconds more.
Serve hot with any syrup or plain. Kids will enjoy.

Notes:
Add 1 tbsp extra sugar if you are not adding any add ins or toppings.
You can buy few sweet potatoes, clean, cut into big pieces, steam and freeze them.Defrost and use as necessary.
You can grate the cooked sweet potatoes if your kids dont mind. I blend all in a mixer.
