Breakfast Frittata

No Oil Fritatta 2

Perfect lunch for weight watchers….mine:)

½ cup capsicum slices (red, green and yellow or whatever you have on hand)
1 cup steamed broccoli, small pieces (even cauliflower tastes good)
1 egg
Salt and pepper
1 tsp olive oil

Heat oil and saute peppers and broccoli. Spread them on the pan and lower the heat.

Pour beaten egg with salt and pepper; make sure all veggies are covered.

Cook covered for few minutes. Flip and cook for few minutes more.
Breakfast or lunch……..up to you.


Beef Steak Wraps

1 steak cut into 12 slices
1 green pepper cut into long strips
1 red pepper cut into long strips
I onion sliced thinly
2 pinch cumin powder
1 pinch oregano
¼ tsp crushed whole red chili powder
Lettuce, arugula-optional
Mayonnaise or sour cream optional
4 tortilla or chapathis
1 tbsp olive oil

Heat oil and saute peppers and onion for few minutes on high flame.
Add oregano, cumin powder and whole red chili powder.
Cut the steak into thin slices.
Spread little mayonnaise or sour cream on the tortilla. Put 2-3 tablespoon of the vegetable mixture in the center. Layer steak slices on top.
Roll and grill for few minutes on the grill or on a nonstick pan on stove top.
Cut and serve.

I added mayonnaise to the kid’s wrap. It tastes delicious even without.
Adding lettuce/spinach /r arugula leaves will make it more crunchy and healthy. Add them if you have on hand.

Mini frittata

Mini broccoli frittata

4 eggs
1 small onion chopped
½ cup green and red bell peppers chopped
½ cup black beans (optional)
½ cup broccoli florets steamed
Salt and pepper
1 pinch oregano
1 pinch red chilli flakes
Beat eggs with a fork.
Add the rest of the ingredients.
Adjust salt.
Preheat oven to 140 Celsius.
Pour into muffin pans and bake for 15-20 mins or till done.
You can saute the vegetables first before adding to beaten egg.
You can make this in a pan on stove top. Cut into wedges and serve.
