Sweet Potato Cookies with Coconut Oil

It’s a very soft cookie, almost cakey. There is a light hint of coconut oil and if you don’t like the smell, then substitute butter. Personally, I liked them very much, but my son didn’t approve. So I guess I might not be making it again. But do try it…at least it has healthy sweet potatoes!

Sweet Potato Cookies with Coconut Oil

Ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp nutmeg grated
½ tsp cinnamon powder
½ tsp salt
¾ cup brown or white sugar
½ cup coconut oil melted
1 cup sweet potato puree
1 tsp vanilla essence

Method:
Whisk flour, baking soda, baking powder, salt, cinnamon and nutmeg powders.
In a large bowl, mix oil, sweet potato puree, sugar and vanilla. Add flour and mix. The dough will be very sticky.
Chill the dough for 30 mins. Make lemon size balls and slightly flatten them.
Place on a parchment sheet and bake in a preheated oven at 150 degree Celsius for 10-12 mins. The edges will start to brown by now.
Cool on a wire rack before storing.

Notes:
Bake on the upper shelf.
If you want crispier cookies, let the cookies cool and bake again for 5-8 mins.

Sweet potatoes are high in Vit B6, Vit C, Vit D, iron, magnesium and potassium, carotenoids and powerful antioxidants. Their natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy, without the blood sugar spikes linked to fatigue and weight gain.
Recently I read that sweet potatoes help against aging and is one of the best breakfasts for people trying to reduce weight.

Ingredients:
2 cups all-purpose flour
½ cup sugar
2 tsp baking powder
1 tsp baking soda
¼ tsp salt
½ tsp nutmeg powder
1 egg
¼ cup oil
¼ cup apple sauce or pumpkin puree
1 cup sweet potato puree
1 tsp vanilla essence
½ cup mini chocolate chips

Method:
Steam a big sweet potato or few small ones. Discard skin and let it cool. Puree in a blender.
In a large bowl, whisk flour, baking powder, baking soda, nutmeg powder and salt.
Combine egg, oil, sugar, vanilla, sweet potato puree.
Add to flour and mix.
Add chocolate chips or nuts of your choice and mix till combined. The dough will be sticky.
Take 1 tbsp of the mix and shape with your hand and place on the cookie sheet. Dip your hands lightly in water once in a while.
Bake in a preheated oven at 150 degree Celsius for 10-12 minutes.

This is something that will be repeated in my house. It is so soft and cakey….next time I will bake the whole mix in a loaf pan.

Notes:
You can steam a few extra sweet potatoes and freeze them. Add it to pancakes or muffins or cookies as required.
Store the cookies in the refrigerator.

Healthy sweet potato pancake

My kid’s favourite breakfast…pancakes. But as usual they have no clue what healthy stuff goes inside them. After all, all is fair in love and making picky eaters eat.

Ingredients:

1 cup all purpose or wheat flour
1 tsp baking powder
1/4 tsp baking soda
1 cup buttermilk
1 tbsp sugar
1 egg
1/2 tsp nutmeg powder
1/2 medium size sweet potato cooked and mashed
1/4 tsp salt
Few butterscotch or chocolate chips
1 tbsp oat bran -optional
1 tbsp date syrup or honey -optional

Method:
Mix flour, baking powder, baking soda, nutmeg powder and salt in a large bowl.
Beat egg in another bowl. Add buttermilk and sweet potato and mix. (you can even use a blender to mix all but dont overmix)
Add wet to dry and mix with a whisk. The mixture will be little thick and not too runny.
Heat a non stick pan or tava and add little butter. Pour 2- 3 tbsp of pancake mixture onto the hot pan. Make 2 -3 pancakes at the same time, depending on the size you want. Add a few chips of your choic on top.
When the bubbles appear, flip it over and cook for a few seconds more.
Serve hot with any syrup or plain. Kids will enjoy.

Notes:
Add 1 tbsp extra sugar if you are not adding any add ins or toppings.
You can buy few sweet potatoes, clean, cut into big pieces, steam and freeze them.Defrost and use as necessary.
You can grate the cooked sweet potatoes if your kids dont mind. I blend all in a mixer.
